Nhut Huynh came to Australia from Vietnam as a refugee in 1984, having escaped with 60 others on a fishing boat. After 6 months in a Red Cross camp in Malaysia he arrived in Sydney like many before him without money, friends or the English language. Today he is a successful chef, business owner, TV and corporate presenter and author. In 1999, he met Jeremy McNamara, who was to become his business partner. Together they have carved a place in Sydney's cutthroat restaurant scene with their very successful RQ restaurant and more recently, their Snakebean Asian Diner and catering business. They share a great passion for food and life. Nhut is also involved in a charity called KOTO (Know One Teach One) which is a non-profit restaurant and catering industry vocational training program for disadvantaged youth and street kids in Vietnam. His philosophy is to give something back by helping disadvantaged youth in Vietnam by sharing his professional skills and training and has been actively involved for a number of years. When he ran RQ Restaurant he sponsored a kitchen student and front-of-house student from the program to give them on-the-job training in Australia. A note from the editor: It was a complete joy to work on this book. Nhut has a wonderful instinct for what works in the kitchen and on the page. He is completely charming, engaging and compassionate individual - we need more Nhuts in this world.
