'One of my fondest food memories is of the darkly browned edges of a rolled roast of beef, cut off for my sister and me when my father started to carve. A little of the same deep caramel flavour was there to be sucked on the end of the wooden skewer as he reached the middle of the roast. I guess it's a memory shared by many.'
