Tess Mallos has been involved in the food industry for more than half her life, working as a consultant to various food enterprises, conducting cooking programs and writing many highly successful books. She was brought up in a Greek family in cosmopolitan Sydney, Australia, and has been cooking since childhood. Travel and years of experience meant that by the time she wrote The Complete Middle Eastern Cookbook she had become aware of how centuries of history intertwine in the cuisines of the region, with each country's cooking influencing and being enriched by the others.
